Apple Crumble
Cinnamon apples under a buttery oat crumble, baked until bubbling. Serve it warm with a scoop of vanilla ice cream.

The easiest dessert in the recipe box: chopped apples tossed with brown sugar and cinnamon, then buried under an oat crumble made with cold butter. Cold butter is the whole trick, because it keeps the topping in clumps instead of turning it into a paste. Ten minutes of cooling is all it needs before it goes to the table.
Ingredients
1 dish (about 6 servings)
Apple filling
Crumble
Method
- 1
Heat the oven to 350°F (175°C).
- 2
Mix the apples with the brown sugar and cinnamon and spread them in a baking dish.
- 3
For the crumble, combine the flour, oats, both sugars and cold butter until crumbly.
- 4
Add the crumble over the apples.
- 5
Bake for 25 to 30 minutes, until the topping is golden and the apples are bubbling at the edges.
- 6
Let cool for 10 minutes, then serve warm with a scoop of vanilla ice cream.
Baker’s notes
- Keep the butter cold and rub it in with your fingertips. Warm butter makes a dense topping instead of a crumbly one.
- Firm apples hold their shape best. Soft apples will collapse into a purée.
- If the top browns too fast, cover the dish loosely with foil for the last 10 minutes.
