Fritters are the messy, generous cousin of a doughnut: yeasted dough folded around cooked spiced apples, torn into pieces and fried until craggy, then dipped in vanilla glaze while still warm. The apples have to cool completely before they go into the dough, or the butter in the filling will make everything greasy.

Ingredients

10 fritters

Dough

Apple filling

Vanilla glaze

Method

  1. 1

Mix the warm milk, yeast and a little of the sugar. Let sit for 8 to 10 minutes until foamy. Stir in the eggs and remaining sugar, then add the flour and salt. Mix until a dough forms, then knead in the softened butter until smooth. Cover and let rise for 1 to 2 hours, until doubled.

  2. 2

Melt the butter in a pan over medium heat. Add the apples, brown sugar, cinnamon and nutmeg. Cook until tender and the juices thicken. Let cool completely.

  3. 3

Roll or flatten the risen dough into a rectangle. Spread the cooled apple mixture over it, fold the dough over and gently flatten. Cut into smaller pieces and toss gently to distribute the apples without kneading. Divide into portions and shape into fritters. Let rest for 15 to 20 minutes.

  4. 4

Heat oil to 350°F (175°C). Fry the fritters until golden brown and cooked through, flipping as needed. Transfer to a wire rack and let cool slightly.

  5. 5

Whisk the powdered sugar, milk, vanilla and salt until smooth. Adjust with a little extra milk if needed. Dip the slightly warm fritters into the glaze and let set before serving.

Baker’s notes

  • Cool the apple filling completely before folding it into the dough. Warm filling makes the dough sticky and hard to shape.
  • Keep the oil at 350°F (175°C). Too hot and the outside darkens before the middle cooks through.
  • Dip the fritters while they are still slightly warm so the glaze clings and sets glossy.
