Chocolate Oreo cookies draped with thin marshmallow spiderwebs and topped with candy eyeballs

These are the cookies that show up on the Halloween table and disappear first. The dough is a soft double chocolate cookie loaded with chopped Halloween Oreos and white chocolate chips, and the chill time keeps them thick instead of flat. Once they cool, five melted marshmallows get pulled into thin strands over the top for the spiderweb, then a few candy eyeballs finish the job.

Method

  1. 1

Cream the softened butter with the brown sugar and white sugar until smooth.

  2. 2

Add the egg and egg yolk and mix until fully combined.

  3. 3

    Mix in the vanilla.

  4. 4

Add the flour, cocoa powder, baking powder, baking soda and salt. Mix until just combined.

  5. 5

Fold in the chopped Oreos and white chocolate chips.

  6. 6

Scoop the dough into balls and chill for 1 hour.

  7. 7

Bake at 350°F (175°C) for 15 minutes, then let the cookies cool completely.

  8. 8

Melt the 5 marshmallows and pull the melted marshmallow over the cooled cookies in thin strands to create a spiderweb.

  9. 9

Add candy eyeballs on top of each web and let set before serving.

Baker’s notes

  • Chop the Oreos into uneven pieces. The fine crumbs and bigger chunks both help the cookies taste like Oreo all the way through.
  • Do not skip the hour in the fridge. Cold dough spreads less, so the cookies bake up thick and fudgy.
  • Melt the marshmallows in short bursts and stir between each one. Pull the strands while the marshmallow is still warm, because it stiffens fast.
  • Add the candy eyeballs while the marshmallow is still tacky so they stay put.
